Getting a new restaurant ready to open

A restaurant can't open until the kitchen passes its inspections, the menu is settled and the staff have practiced service. This project holds the bowl tests, photos of the room, fit-out fixes by trade, the opening to-dos and the dates up to the first night.

The Kumo Ramen Opening project in Thicket over a photograph of steam rising from stock pots in a dim ramen kitchen: the health flag reading At risk, the opening dates and five people, then six cards: Bowl tests as nine photographs of ramen and sides in charcoal bowls, the Message Board with the two line cooks who left on top, the Fit-out board with fixes under Kitchen equipment, Electrician and Plumber, To-dos with four lists on the progress chart, The room as nine photographs of the counter, the kitchen and the dining room, and the Calendar with the line cook interviews next.

Kumo Ramen keeps its bowl tests and photos of the room in two Docs & Files grids and posts hires, menu decisions and staffing news on the Message Board. Fit-out fixes sit on Boards in a column for each trade. The menu, training, the soft opening and licenses are four lists in To-dos on the progress chart, and the Calendar holds the cook interviews, the two soft opening nights and the first night open to everyone.
