Opening a taproom in a working brewery

A brewery opening a taproom has to finish the room, pass inspections and train bartenders while brewing enough to pour on opening day. This project holds each batch on a board from koji to keg, brew room photos, four to-do lists, the opening calendar and the brewers' chat.

The Story Avenue Taproom project in Thicket over a photograph of stainless steel sake tanks along a white brick wall: the health flag reading At risk, the opening dates and five people, then six cards: Brew room as nine photographs of steamed rice, koji, the tanks and the press, the Message Board with the slow tank on top, the Batches board with cards in Koji and starter, Fermenting, Pressed and resting and Kegged and bottled, To-dos with four lists on the progress chart, the Calendar with the second sake course next, and the Tank room chat with this morning's readings.

Story Avenue Sake keeps photos of its brew room in Docs & Files, posts the opening plan and the slow tank on the Message Board and moves each batch from koji to keg on Boards. The taproom build, the opening lineup, the staff and opening day are four lists in To-dos, the Calendar holds the inspections, the staff training and opening day, and the brewers post tank readings in Chat.
